Simple recipe and so much fun 🙂
I’m in love with lavender cookies. I prefer when they have a noticible notes of lemon so the best recipe I found so far is from Moje Wypieki blog.
In the original recipe, there was lemon juice, but I had to use some lemon scent (and it was still very tasty: D).
I would recommend those with Sunday’s coffee, especially the one right after breakfast!
210 g butter, softened
3/4 cup granulated sugar
1 egg yolk
pinch of salt
1 tablespoon dried lavender flowers
1 tablespoon lemon juice
1.5 cups flour
a few drops of lemon oil
3 tablespoons cornstarch
Quickly knead the dough using all ingredients above. Shape it into a roll, wrap with plastic wrap and chill for two hours.
Chilled dough cut into equal slices – how thick depends on your preferances. I cut them in thicker slices because I needed to press this lovely romanian pattern on them. However, otherwise the optimum thickness is about 5 mm.
Bake 14 minutes at 170 degrees.
