I don’t know how about you, but I love Friday lunches. I think it’s the perspective of weeknd being so close makes me feel extra special happy and ready to cook. So I usually do and celebrate it with something tasty yet simple.
Exactly like this pasta below 😀
It looks like a hard to prepare, fancy dish but in truth, I spent maybe 15 minutes preparing it. And adding to its awesomeness – you can prepare it at work, no cooking involved. You’ll manage with only an electric kettle or a microwave.

Pesto and Dried Tomatoes Soba Noodles
50g Buckwheat Vermicelli Soba
Few Dried Tomatoes in Olive Oil
10 g of Feta Cheese
50g Basil Pesto
Put noodles into a boiling water and cook for 5 minutes (if you stir from time to time, you will have the same effect even without boiling, just soking in hot water for 5/6 minutes).
Cut dried tomatoes and Feta cheese into small chunks and put them into a one bowl with basil pesto. I used a ready made pesto from a healthy food shop but you could do it easly yourself by mixing a bunch of fresh basil, two spoons of pine nuts, 70 ml olive oil, 10 grams of grated parmesan, salt and pepper in a food processor.
Add drained, hot noodles to the mixture, stir well and eat 😀
You can easly upgrade this pasta just by adding a bit of fried chicken or tofu.
