Do you know the name of amazing german gingerbreads – big, soft and fluffy, coated with chocolate or glazed?
Yeah, apparently me neither 😀 That’s why when I saw this recipe for Lebkuchen gingerbreads I assumed those will be the ones I’m looking for… My bad hehe
Yet, even though crispy spice cookies were not the ones I was aiming for, those are awesome for soaking in coffee (you guys have never tried anything sooooo good with coffee!!) and work great as a christmas tree decorations.
They also get softer when kept in a cookie tin or a jar – just like the one on pictures 😀 (btw this was a gift from my friends and O M G doesn’t it look amazing!!??)
125g cane sugar
1.5 teaspoon cinnamon
1 teaspoon nutmeg
0.5 teaspoon cloves
pinch of grinded cardamon
caster sugar and lemon for glaze
Mix flour and spices. In a separate bowl mix egg with sugar until fluffy and start adding honey mixing it as you go.
Add flour and knead a dough. Leave it in the fridge for 2 hours.
After that time roll the dough until three milimiters thin and cut cookies. Bake in 180 degrees for 15 minutes. Glaze with a mixture of caster sugar, hot water and a teaspoon of lemon juice.
